Job Summary
- Responsible for all food and beverage
- production and service for the club.
- Directly supervise the F&B managers, bar and service staff.
- Plans and implement budgets, hire, train and supervise subordinates and apply relevant
- marketing principles to assure that the wants and needs of club members and
- guests are consistently exceeded.
Job Tasks
1. Develops an operating budget for each of the department’s revenue outlets; after
approval, monitors and takes corrective action as necessary to help assure that
budget goals are attained
2. Assures that effective orientation and training for new staff and professional
development activities for experienced staff are planned and implemented
3. Inspects to ensure that all safety, sanitation, energy management, preventive
maintenance and other standards are consistently met
4. Assures that all standard operating procedures for revenue and cost control are in
place and consistently utilized
5. Helps plan and approve the organizational chart, staffing and scheduling procedures
and job description/specifications for all department staff
6. Manages the long-range staffing needs of the department
7. Establishes quantity and quality output standards for personnel in all positions within the
department
8. Ensures that all legal requirements are consistently adhered to including wage and hour
and federal, state and/or local laws pertaining to alcoholic beverages
9. Researches new products and develops an analysis of the cost/profit benefits
10. Develops and implements policies and procedures for food and beverage departments
11. Monitors purchasing and receiving procedures for products and supplies to ensure proper
quantity, quality and price for all purchases.
12. Greets guests and oversees actual service on a routine, random basis
13. Develops wine lists and bottle/glass wine sales promotion programs. Oversees all wine sale events to ensure proper ordering and billing.
14. Develops on-going professional development and training programs for Beverage program,
service and bar personnel
15. Ensures correct handling procedures to minimize dinnerware and glassware breakage and food
waste
16. Addresses member and guest complaints and advises the General Manager about appropriate
corrective actions taken
17. Assists in planning and implementing procedures for special club events and banquet
functions
18. Maintains appearance, upkeep and cleanliness of all food and beverage equipment and
facilities
19. Monitors employee dress codes according to policies and procedures
20. Approves all product invoices before submitting to the accounting department
21. Manages physical inventory verification and provides updated information to the
accounting department
22. Audits and approves weekly schedule and payroll
23. Complete periodic dinnerware, glass and silverware inventories
24. Implement and monitor sanitation and cleaning schedules
Essential Job Functions
- Works with General Manager to help determine, establish, and implement service standards for the Club.
- Monitor and maintain cleanliness, sanitation, and organization of assigned work areas
- Prepare weekly work schedules and adjust schedules throughout the week to meet the business demands.
- Complete monthly bar inventory counts and give to Club Controller within designated period.
- Order and maintain proper bar inventory for entire Club operation.
- Give all receipts, invoices and documents to proper Club employee or Member.
- Inspect bars for cleanliness, working condition, and proper furniture/equipment set up; rectify any deficiencies with respective
- departments.
- Conduct a pre shift meeting with bartenders and review all information pertinent to set-up and service of event/evening.
- Check bar cleanliness, attractiveness, and layout; ensure the area is set up in agreement with event or shift needs and ECC standards; resolve any problems.
- Maintain complete knowledge, characteristics, descriptions of all beer, wine, champagnes and liquor served at Club.
Maintain complete knowledge of service requirements for each scheduled bar event:
a) Know event host or member along with groups' name.
b) Type of function and expected attendance/guarantee numbers.
c) Scheduled hours of service.
d) Special requests/arrangements.
e) Order of service, traffic flow in room.
Communicate effectively with bartenders, servers and kitchen staff.
Constantly monitor staff performance in all phases of service and job functions, ensuring all procedures are carried out to
ECC standards; rectify any issue that may arise.
Direct and assist bar staff with timing of their
job functions to ensure optimum service to Members and guests thought special event or member dining.
Promote positive Member relations by observing Member reactions and conferring frequently with bar staff to ensure Member satisfaction,
Ensure all bars are broken down properly and all perishable items are stored correctly, and all supplies are returned to designated storage areas after each function/shift.
Provide feedback to staff on their performance.
Handle disciplinary problems and counsel employees according to ECC standards.
Attend designated meetings, including menu and wine tastings.
Ensure staff complete all closing duties before leaving the shift.
Perform all other assignments and responsibilities as directed
