Introducing The Shelborne by Proper, a holistic restoration of the iconic Miami beachfront hotel — re-opening in 2025. This extensive renovation will preserve the landmark’s 1940 art deco distinction and authentic charm while modernizing interiors from top to bottom — all embracing the rich heritage originally crafted by Morris Lapidus and Igor Polevitzky, two of the most celebrated Art Deco architects of the mid-twentieth century.
The Shelborne will introduce four vibrant new food & beverage destinations to the neighborhood, each suited for warm weather dining, with an all-day signature restaurant, a lobby bar- lounge, and curated cafe. Resort amenities include a spacious pool and lush garden lounge, indoor-outdoor cabanas, sundeck terrace, state-of-the-art fitness center, dedicated access to a private beach club, and more than 15,000 square feet of indoor-outdoor meeting & event space.
Job Overview
The Sommelier will lead our wine program, overseeing the selection, pairing and service of wines in our restaurant, lounge, and private dining experiences. This role requires deep expertise in global wines, strong guest engagement skills and a commitment to curating an exceptional beverage program that aligns with The Shelborne’s brand and culinary vision.
Key Responsibilities:
Wine Program & Service
- Curate and manage a dynamic, well-balanced wine list that complements The Shelborne’s culinary offerings
- Conduct tableside wine service, assisting guests with thoughtful recommendations and pairings
- Maintain a deep knowledge of global wine regions, vintages, and producers, ensuring a diverse and exciting selection
- Develop and implement a thoughtful wine-by-the-glass program, along with a selection of rare and allocated bottles
- Lead engaging wine tastings, pairing dinners and private wine experiences for guests
Operations & Inventory Management
- Oversee wine purchasing, inventory management and cost controls to maintain profitability while delivering a world-class experience
- Build relationships with top wine producers, distributors and local vintners to source exclusive and unique selections
- Ensure proper storage, cellar organization and wine preservation techniques
- Monitor trends in the wine industry and continuously refine the wine list to reflect guest preferences and seasonal offerings
Guest Experience & Education
- Provide exceptional, personalized service, enhancing guests’ dining experiences through storytelling and education
- Conduct training sessions for restaurant and bar staff, ensuring high standards of wine service and knowledge
- Develop printed and digital wine list descriptions to help guests navigate selections effortlessly
Collaboration & Brand Representation
- Work closely with the Executive Chef and culinary team to create thoughtful wine pairings and seasonal menu integrations
- Partner with marketing to develop wine-focused promotions, social media content and special events
- Represent the hotel at industry events, wine tastings and networking functions
Qualifications & Experience
- Certified Sommelier (Court of Master Sommeliers Level 2 or equivalent) required; Advanced or Master Sommelier preferred
- Minimum of 3 years of experience as a Sommelier in a luxury hotel, fine dining restaurant or high-end wine bar
- Extensive knowledge of Old and New World wines, spirits and beverage trends
- Strong leadership, communication and guest engagement skills
- Ability to train and inspire staff on wine knowledge and service etiquette
- Experience with wine inventory management and purchasing
- Passion for hospitality and a dedication to creating extraordinary guest experiences
